Pekmez ( Grape Molasses) Making Activity

From Grapes to Pekmez Molasses

Grape harvesting time in the fall season of Cappadocia is one of the most exciting times of the region.

We will go to our vineyards and start picking the grapes using traditional techniques and tools.

Smashing the grapes to collect the juice is almost like dancing since we use our foots. After a long dance over the grape covered terrace the juice get collected into a bucket where it gets filtered then the boiling process begins.

The smoky taste of the pekmez (grape molasses) comes from the bonfire where it gets boiled for almost a day.

As the juice gets boiled it becomes thick and sweet.
